Potassium metabisulfite, or potassium metabisulphite, is an essential oenological additive used to protect wine and musts from oxidation. It is also employed to sanitise all equipment needed during wine- and beer-making.
Potassium metabisulfite in wine
Using potassium metabisulfite helps eliminate microorganisms and oxidative enzymes (present in the grape skins), protecting both delicate aromas and colour.
Other uses of potassium metabisulfite
Potassium metabisulfite can be used as a sanitiser and steriliser for the various tools used in the production processes of wine and beer. In brewing, the product is used to sterilise bottles, paddles, containers, fermenters and all other equipment needed during beer production.
