What Is a Copper Still with Mushroom Condenser

Distillation separates one substance from another using heat and condensation. Among the tools used, the copper still with mushroom condenser is a proven solution.

The mushroom-condenser copper still is a specific type of still with direct cooling. It includes a boiler, a thermometer (to decide which fractions to discard), and a cooling condenser with water inlet and outlet for continuous circulation. The plug-in thermometer is inserted in a dedicated socket on the boiler and secured with a screw. It is supplied pre-calibrated, but transport may cause slight shifts. To recheck, immerse the stem in water together with a standard body thermometer; compare the readings and, if needed, adjust using the screw on the back of the stem. The thermometer shows both Celsius and Fahrenheit.

This still is characterized by discontinuous operation and by its top-cooled condenser—known as the “mushroom.”

What Is a Mushroom-Condenser Copper Still Used For?

Its primary use is the distillation of spirits such as grappa, whiskey, and brandy. It can also be used for essential oils; for steam distillation we recommend adding a filter/column.

Copper stills with mushroom condenser are particularly popular for producing grappa.

How Does a Copper Still with Mushroom Condenser Work?

The mushroom condenser has two connectors: one for the inlet and one for the outlet of the cooling water. This keeps the condenser cold throughout the run. Typically, one tube connects a water source (a kitchen tap is fine) to the lower inlet; another tube, on the upper outlet, serves as the drain.

Let water flow slowly and continuously from the tap. It reaches the cooling head and replaces the warmer water that exits from the upper outlet.

The components fit together without mechanical fasteners. The condenser is pressed onto the boiler via a conical joint. As copper heats up, it expands slightly and helps the parts stay seated. The absence of a lock acts as a safety feature: if there is a blockage, vapors can vent and dangerous pressure build-up is avoided. If any seepage occurs at the joint, seal with a flour-and-water paste or use PTFE tape.

On a new still, run an initial water-only distillation to test and sanitize. Repeating this step before use helps improve results.

After each run, clean thoroughly with kitchen degreasers, copper cleaners, or natural solutions such as hot vinegar and salt; lemon and water also work well and help maintain appearance.

Rinse well and dry completely. Proper drying prevents oxidation; storing the still while damp can cause green patina, which may damage the copper over time.
