What Does Batch Still Mean (Copper Stills)?

The term batch still refers to a type of distiller whose operation is not continuous. In fact, after each distillation cycle, the process must be stopped to refill the boiler with fresh raw material and start a new distillation.

The still is an essential tool for distillation. This model consists of two distinct parts: a boiler connected via a pipe to a lateral cooling coil placed inside a container with water inlet and outlet for constant recycling and optimal cooling.

This tool is typically used to produce alcoholic beverages like grappa, whiskey, brandy, or to obtain perfumes and lotions.

The copper pot still with coil condenser, also called batch still, is by far the most widely used type. But what exactly is it?

What Is a Copper Stills (Coil) Still or Batch Still?

The copper still is a tool used for distillation. The coil model, in particular, is equipped with a lateral coil condenser and is thus distinguished from the mushroom-head models primarily by its cooling method.

While not inherently superior to other types of stills, the coil condenser version generally produces slightly higher quality distillate.

What Is a Copper Still Used For?

The coil condenser still is used to perform the distillation process of spirits like grappa and brandy, as well as essential oils.

For essential oil extraction, we recommend combining it with the optional filter column. This allows for proper steam distillation, where herbs are placed above the water and never come into direct contact with it. The steam rising from the boiler captures the aromatic properties and transports them to the condenser.

How Does a Copper Coil Distiller Work?

Operating a copper coil distiller is quite simple.

Start by preparing the still. A first distillation using only water is a good way to clean and sterilize the product. Once done, pour water and the desired material (e.g., pomace) into the boiler.

For distilling solid ingredients, it may be helpful to use a copper false bottom, a two-piece mesh designed to sit at the base of the boiler. This keeps the material from touching the bottom and reduces the risk of scorching the batch.

Next, place the pre-chamber over the boiler, connect the pipe to the coil condenser, and attach the water inlet and outlet to the side vessel where the coil sits.

Now it’s time to begin the distillation process. Use a gas burner or non-induction electric plate at low heat. The slow, steady heating will allow the copper to expand and seal the conical joints, enabling a clean and efficient distillation.

As the water reaches the appropriate temperature, vapors will rise from the boiler to the pre-chamber, begin condensation, and enter the cooling coil via the spout and pipe. The coil rests inside a water-filled container that condenses the vapor into liquid.

With a proper water inlet and outlet setup, cold water enters from the bottom, pushes the warm water upward, and exits via the upper outlet. This ensures a continuous cooling cycle.

Soon, distillate will begin dripping from the outlet. Note: discard any output before the thermometer reaches 78°C (172°F), as it contains methanol. The ideal distillation range is between 78°C and 82°C (172°F to 179°F), which gives you the "heart"—the best part of the distillate.

The process is complete when the flavor becomes watery, indicating the alcohol has been fully extracted.

What Are the Advantages of a Copper Coil Still?

The fact that the coil still is made of copper is already a major advantage, as copper is an excellent thermal conductor. It allows heat to spread evenly and be retained efficiently.

One key advantage of the coil model is its cooling system. It’s slightly more efficient than the mushroom-head type because the cooling happens in a separate vessel, not directly over the boiler.

When the condenser is placed directly on the boiler (as in mushroom-head stills), the heat from the boiler can transfer to the cooling water, reducing efficiency unless additional cooling methods like ice are used. This may result in higher water consumption or less effective condensation.

With a side-mounted coil condenser, these risks are minimized, delivering better performance and more consistent results.
