The electric grape crusher-destemmer is a machine designed to crush grapes and perform destemming operations, which consist in separating the berries from the stems. This step distinguishes this machine from a standard grape crusher, which lets everything pass between the rollers without distinction.
The advantages of destemming
Using a machine capable of destemming is essential not only because it reduces effort and therefore the operator’s workload, but above all because it makes it possible to obtain a final product that is less tannic and with a higher alcohol content.
This process must necessarily take place during crushing because removing the stems before fermentation means avoiding diluting the alcohol due to the water contained in the stems themselves and preventing fermentation from slowing down.
Therefore, performing destemming will reduce the space taken up by the product, considering that stems account for around 30% of the volume of the grapes; it will increase the alcohol content, improve the colour of the wine because the stems absorb the substances responsible for this, and above all increase its quality, as it will be less bitter and therefore more enjoyable.
Easy to use
Among the advantages of the crusher-destemmer we can certainly include ease of use. It is in fact a machine that can be easily operated both by beginners and experienced users.
The first step is to place the machine on a vat or any container that will hold the processed product. Then it must be connected to the power supply and the process can start by feeding the bunches into the loading hopper.
Simple but effective
After loading into the hopper, the crusher-destemmer carries out its operations. First, the screw conveyor inside the tank transfers the bunches, through its rotation, directly towards the rollers that perform the crushing. These are made of aluminium (optionally rubber rollers can be fitted) and are self-adjusting to allow the passage of larger pieces, thus avoiding blockage or breakage.
The crushed grapes then pass into the destemming chamber, where a shaft with paddles, by means of its rotation, separates the berries from the stems, ejecting the stems through a side outlet and letting the processed product fall down into the vat.
The moving parts are driven by a system of gears and pulleys powered by a 1 HP motor (0,75 Kw) via a belt.
The machine can be fed continuously to allow constant processing, bearing in mind that its maximum working capacity is estimated between 16 and 18 quintals per hour. Working capacity means the quantity of grapes that can be processed in one hour.
Reliability and safety
The crusher-destemmer is manufactured entirely in Italy using top-quality materials to guarantee a product fully compliant with Italian legislation. The machine is built with an enamelled sheet metal frame, painted with non-toxic coatings suitable for food use, and a stainless steel internal screen for the destemming shaft. The standard rollers are supplied in aluminium and feature a special spring system to ensure optimal crushing and protect the internal gears and rollers from possible damage caused by the passage of solid parts.
In addition, to ensure operator safety, several guards are fitted to cover the moving parts that could cause injury, and an emergency stop button is placed on the motor.
Easy to clean
During the design phase, cleaning of the machine was not overlooked. This is why a quick-release system was created for the guard protecting the destemming grid, allowing the operator to remove and clean it easily.
