AgriStore di Cosenza V.Neutral potassium tartrate, better known as dipotassium tartrate, is a natural additive fully compliant with current national and EU regulations for products intended for oenological use.
Use of dipotassium tartrate in oenology
In winemaking, potassium tartrate is used as a deacidifier, i.e., to correct wines with high fixed acidity.
As noted above—but it is worth stressing—potassium tartrate is of natural origin, being itself a component of wine. This makes it ideal for correcting sharpness without disturbing the wine’s natural and organoleptic balance.
Doses of potassium tartrate
Optimal dosages must be identified in advance through appropriate laboratory trials. Note that 152 g/hL of product neutralise 1% acidity.
For use, dissolve the product in water, then add it to the wine, stirring thoroughly to ensure proper blending.
