Potassium bicarbonate (KHCO3) is used in winemaking as a deacidifier, to keep the wine’s characteristics unchanged. This product therefore aims to reduce the acidity of wines to make them softer and more pleasant. It can also be used as a dietary supplement. In the food industry it is used as an additive.
Potassium bicarbonate is also noted as an excellent fungicide for plants, and is particularly used in organic farming to treat certain diseases such as scab, powdery mildew and monilia. The product leaves no residues on treated crops and guarantees full safety for operators and animals, providing a valid remedy comparable to sulfur- and copper-based preparations.
It is advisable to treat plants when they show signs of disease, during flowering or in the hotter periods when plants may be at greater risk, repeating the treatment every 8–10 days. Given its possible use in the food chain, one of the strengths of potassium bicarbonate is that it can also be used when fruit is present, treating the plant preferably in the evening and harvesting 24 hours later.
The correct amount to use, depending on the intended use, should be established through precise analysis by the oenologist when used as a wine deacidifier, while as an antifungal it is used at 0.5%, that is, by adding 5 grams of product per litre of water. For greater effectiveness, use at least 800–1000 litres per hectare.
