Diammonium Phosphate (DAP) is a fermentation nutrient composed of nutrient salts and thiamine hydrochloride, used to support the alcoholic fermentation of grapes. It is particularly useful in more demanding fermentations and for refermentation.
DAP provides yeast-assimilable nitrogen to support yeast activity during fermentation. At the beginning of fermentation, yeasts rapidly consume available nitrogen, so supplementation with nutrient salts may be required.
How to use Diammonium Phosphate
Dissolve the product in a small amount of water and add it to the must before fermentation, then mix the batch thoroughly.
Composition of Diammonium Phosphate
- Diammonium Phosphate: 99.75%;
- Thiamine hydrochloride: 0.25%.
Dosage of Diammonium Phosphate
Use 10 to 30 g/hL maximum. We recommend consulting an oenologist to determine the appropriate dosage for the specific fermentation.
