AgriStore di Cosenza V.Bentonite powder is a colloidal clay used to precipitate pectic substances in particularly cloudy wines. Bentonite enables protein adsorption and is also used as an inorganic fining agent.
Using bentonite in wine
In musts, bentonite can help achieve protein stability more easily, enhancing the wine’s aromatic expression.
It appears as a fine, yellowish powder and is widely used in the food sector not only for wine, but also for clarifying vinegar and fruit juices.
How to clarify wine?
The fining action (selective on wine proteins) depends on properly preparing the bentonite “GEL”, obtained by allowing it to swell in 10 parts water for 12–24 hours.
The water forming the “GEL” is not released into the wine, so dilution is not a concern. Brilliant wines in a short time can be obtained by using bentonite directly on the must. Excellent results are achieved by combining bentonite with other fining agents, such as gelatins, chiarosil, caseinates, etc.
Dosage
As for dosing, use 40–150 g per hL when used in wine, and 100–150 g per hL for clarifying vinegar. As always, carry out preliminary trials to establish the appropriate ratio based on the product to be treated.
