Zymogen Yeast with Nutrient Salts 75 g
FrankeZymogen yeast, dehydrated Saccharomyces cerevisiae var. ellipsoideus, suitable for the vinification stage. One 75 g sachet is enough to start fermentation directly in 150–250 kg of must.
How to use Zymogen yeast during vinification
Prepare the must in the indicated quantity, then add the contents of the sachet and wait for fermentation to start vigorously. Subsequently add to the entire batch, up to a maximum of 50–60 quintals.
The yeast can be added to the must about 6–7 hours after adding sulfiting agents.
