25-Liter Bain-Marie Copper Pot Still – Coil Condenser with traditional worm (coil) cooling, made entirely of copper. The hand-forged iron frame supports the boiler and the condenser bath. Supplied with an analog thermometer to read the boiler’s internal temperature and make accurate cuts—heads, hearts, and tails. Handcrafted piece with a 1.2 mm copper build (1.03 mm base on earlier artisanal lots). Made in Italy.

Difference vs. a traditional still

The bain-marie alembic features a double-boiler design: two nested boilers, where the inner boiler holds the charge to be distilled, while the interspace between the two is filled with water.

Advantages of a bain-marie still

This configuration is commonly used for solid charges such as grape pomace and fruit, and also delivers excellent results with liquids.

It is suitable for producing spirits (grappa, brandy, whisky, fruit distillates, etc.) and high-proof alcohol such as vodka, where legally permitted.

Using a bain-marie still helps you achieve higher quality because solids never contact copper surfaces directly over the flame, preventing scorching that can spoil the run. Compared to a standard pot still, it provides gradual, even heating of the charge and a very gentle extraction of aromas from both fruit and pomace.

Additional details

The bain-marie version has two tubes exiting the outer boiler with different roles. The shorter, straight tube is used to fill and drain the water jacket and also acts as a vent during distillation. The curved tube holds a supplied glass sight cylinder to monitor water level—top-ups may be required during the run due to evaporation.

From the options menu, you can customize your alembic by adding a copper mesh to keep pomace off the boiler bottom, or a filter column for steam (hydro)distillation (all accessories are copper), or the wooden base.
