Diammonium phosphate (DAP) is a blend of nutrient salts and vitamins used to activate the alcoholic fermentation of grapes. It is extremely useful in more demanding fermentations or for refermentations.
It is a natural nutrient for yeasts. For correct fermentation, the must must be rich in yeasts and phospho-nitrogen substances. At the start of fermentation, yeasts rapidly consume yeast-assimilable nitrogen, and this shortage must be offset by adding substances such as nutrient salts.
How to use diammonium phosphate
Dissolve the product in a little water and add to the must before fermentation, homogenising the batch to be treated.
Composition of diammonium phosphate
- Diammonium phosphate 99.75%;
- Thiamine hydrochloride 0.25%.
Dosage of diammonium phosphate
Use 10 to 30 g/hL maximum of diammonium phosphate. However, we recommend consulting an oenologist to determine the exact dosage to use.
